Tasting a tempting tikka on an lonely Indian roadside led us on a journey to recreate the worlds juiciest chicken – British Farm Assured chicken thighs, marinaded overnight in seven spices, ginger, garlic, fresh coriander, natural yoghurt, and lemon juice.
The best of Bengal – beef brisket slow cooked with with spices including Panch Phoran, a whole spice mix consisting of fennel, fenugreek, nigella, cumin and mustard seed.
Layers of lamb shoulder done the Portuguese way – soaked in red wine vinegar, we’ve taken the classic Vindaloo right back to its roots then remixed it into a legendary modern-day masterpiece. The spiced-up secret is in the onion masala!
The #RedDal was our first ever dish. Inspired by a beetroot idli eaten on a beach in Kerala, its our signature vegan filling. Cooked with seven unique spices including cardamom, cloves, cinnamon, Kashmiri chilli – it’s a warming comfort dish and just perfect in a roll or a bowl.
Kala chana (black chickpea) with charred sweet potato in a light coconut and tamarind sauce – naturally low in fat and rich in vitamins and minerals! It’s a great source of daily fibre and plant protein…EPIC!!
Our bloody marvellous #saagwala is powerfully alliaceous (Google it!) – nothing better than the smell of roasted garlic in the morning. The perfect sharpness of this filling elevates this Punjabi classic to another level.
